PORK VINDAGIRI



INGREDIENTS

Pork   - 500 gm
Onion  - 1 sliced
Green chillies - 5-6
Ginger chopped - 1 tsp
Garlic chopped   - 1 tsp
Chilly powder   - 2-3 tbsp
Coriander powder  - 1 tbsp'
Curry leaves
Salt
Coconut slices
Mustard seeds
Coconut oil


To Grind

Ginger   - 2 Tbs
Garlic     - 4-6 cloves
Mustard Seeds  - 1 tsp
Fennel Seeds    - 1 tsp
Garam Masala  - 1/2 tsp
Vinegar - 2 tbsp
Pepper - 2 tsp


METHOD

Grind the above ingredients to fine paste.Adjust vinegar according.
Heat oil in a pan and add oil and splutter mustard seeds and curry leaves
Add coconut slices,fry till light brown.
Then add ginger,garlic, onions and green chilies.
Saute them well and add the ground paste.
Then add chilly and coriander powder,add salt also
When the raw taste goes,add the pork and combine it well,also add 1 cup of water.
Cover and cook for atleast 40 mins until the meat is cooked.Towards the end add some garam masala.
Open and keep on fire to lessen the water content.
Serve it hot with appam and rice.
