AUTHENTIC KERALA FISH FRY
There are different ways that I try out fish frying depending on the availability of ingredients....But this one is the recipe that I used to try commonly as it is the simplest with the ingredients always there in my kitchen.
You can try this for any of the fish varieties..I've chosen my favorite Seer fish (NeiMeen) for today's menu...It is one of the tastiest varieties of fish that we used to get in Kerala.Here is the simple recipe for a tasty fish fry!!
Firm Fish of choice – 4 to 5 pieces (i used seer fish)
Ginger Garlic paste – 1 tsp heaped
Pepper powder – 1/2 Tbsp
Red chili powder – 1 1/2 Tbsp
Turmeric powder – 3/4 tsp
Lemon/vinegar -3-4 Tbsp
Salt as needed
Curry leaves – 2 sprigs
Oil to fry
Marinate the fish with the above paste well.(atleast 20 mins)

Method
Make a paste out of all the ingredients except fish. Check salt. Add more if needed.Marinate the fish with the above paste well.(atleast 20 mins)
Heat the oil and fry it until cooked crispy.
If not using immediately, cover and store in the refrigerator if using within a day or in the freezer if using after more days.
Defrost when needed and pan fry in hot oil on a medium flame till brown on both sides and cooked through.
Serve hot with rice and other curries.

A tip to remove the fishy smell of the Fish: Coat cleaned fish with juice of one lemon and salt. Keep aside for 5 minutes and again clean the fish in running water. All the fishy smell will go!!!
