Duck Roast (Kottayam style Tharavu roast)
Ingredients
Duck -1 full around 2.5 kg, cut into medium size pieces
Mustard seeds- 1 tsp
Onion- 2 medium, sliced
Ginger- garlic chopped - 4 tbsp each
Green chillies- 8 nos slitted
Turmeric powder- 1/2 tsp
Red chilly powder- 2 tbsp
Coriander powder- 3-4 tbsp
Pepper powder- 2 tbsp
Fennel powder- 1tsp
Garam masala- 1 tsp
Tomato- 2 chopped
Curry leaves
Coconut Oil
Preparation
Heat a pan and pour coconut oil. Splutter mustard and curry leaves
Saute onion, ginger, garlic and green chillies well. Add a bit turmeric and pepper powder also.
When done, add chilli powder, coriander powder, fennel powder, pepper powder and garam masala.
Saute well. Add the tomato and mix together.
Close the pan with a lid and leave the mix on low flame for 7 mins.
Then add cleaned duck to the masala mix and coat well.
Cook on a low- medium flame for 45 mins.
Once done, open and mix the whole well on a medium-high flame for 5-7 mins
The curry will turn dark by then.
Serve the duck roast hot with appam or rice.
