CARROT CAKE....
This is a very yummy cake...try it in ur kitchens...
Ingredients
2 eggs1 cup vegetable oil
2 cups white sugar
1 teaspoon vanilla extract
11/2 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pineapple (crushed pineapple available in stores)
1 cup of mixed dry fruits and nuts (i used cranberries,roasted almonds,raisins)
Directions
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat together eggs, oil, white sugar and vanilla. Mix in flour, baking soda, salt and cinnamon. Stir in carrots.Also add pineapple and dry fruits.Pour into the baking dish.Top with some dry fruits.
Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then move another plate to cool completely.
You can serve it with vanilla frosting or cool whipped cream.
