KADAI SHRIMP


INGREDIENTS


2 pounds of shrimp
1 teaspoon grated ginger
2 teaspoons chopped Garlic
2 tablespoons kashmiri chilli powder
1 tablespoons vegetable oil 

1/2 cup creamed coconut
150 ml water
2 tomatoes, chopped
1 pack coriander, leaves removed and chopped

PREPARARTION


Mix together the shrimp, ginger, garlic and kashmiri chilli powder. Leave to marinate for no more than 10 minutes.
Fry the remaining garlic in the oil for 1-2 seconds until light brown.
Add the shripm  mixture and fry for 2-3 minutes or until the shrimp just turn pink. Stir in the creamed coconut, water, tomatoes and coriander.
Bring to the boil, simmer for 2 minutes. Season to taste.
Best side for roti,nan.
