HAKKA NOODLES
This is an Indo- Chinese creation. Easy, quick to make.This is my special dish.I am sure it must be yours too, especially if you have kids around :) There are immense varieties of this famous dish available with each cook adding his/her own touch of creativity to it. I don't have a specific version since I tend to add ingredients whatever I thought would make my dish to our taste.
INGREDIENTS
1 packet Noodles (200gms)
1-2 tbsp soy sauce
1 tsp vinegar
1-2 tbsp chilli sauce
1 tspn garlic paste
1/2 tsp sugar
1 tbsp corn flour
1 tbsp chilly powder
2 dry chillies
2 onions, sliced
1/4 cup frozen beans
1 cup thinly sliced capsicum
1 medium carrot, julienned
1 medium celery, thinly sliced
1/2-1 cup bean sprouts
salt and pepper to taste
METHOD

mix chilli sauce,soya sauce,vinegar,pepper(1/2 tsp),sugar and salt(a pinch).

mix cornflour with water.
Boil the noodles as per the package instruction. Add salt, oil to the water.When it is almost cooked, drain the noodles and toss it lightly with cold water. Drain it
completely and set aside.
In a wok or a pan heat oil and add chilli powder and dry chilies,do not burn it.Add the noodles and spread the chilly all over it.Mix it well and move the noodles to a plate.In the same pan add oil ,then add garlic paste.Saute it for few mins then add onions,carrot,beans and celary.When they are almost cooked add capsicum,saute it for another two mins.Now add the first paste and mix it well with the vegetables.Then add the second paste(optional).Mix the noodles with the vegetables and sauces.Give it a good toss and saute for another minute or so.
Remove from fire.
Serve hot and immediately.
NOTES :
- It is not necessary to use cornflour paste,sometimes it may give raw taste of flour to the dish.Instead u can add some warm water to the vegetables and sauces(just to loosen the vegetables and sauces).
- After draining the noodles,add one spoon of oil and mix the noodles.This will help the noodles to be very smooth and shiny.
- You can add multi coloured capsicum to make the dish more attractive.
