VEGETABLE KORMA (north indian style)
Ingredients
Green chili 3 nos
Ginger garlic paste 1/2 tsp
Mixed vegetables 1 cup ( Carrot, Beans,
etc )
Milk 1/4 –
1/2cup
Coriander powder 2 tsp
Salt to taste
Bay leaf 2 nos
Curry leaves 8 nos
Coriander leaves 2 tbsp
Cloves 2 nos
Cinnamon stick 2 ( small )
Cardamom 1 no
Cashew paste 4 Tb sp
Method
In a non-stick pan heat oil. When hot, add bay leaf, curry leaves,
Cloves,Cinnamon stick,Cardamom. Add the chopped onions, green chilies and saute the onion till it turns
golden brown. Add the ginger garlic paste and fry this well till the
raw smell leaves. Add coriander powder and then the vegetables with 1 cup water along with salt
and allow the vegetables to cook in medium flame for sometime.Dont add too much of water.When they are almost cooked add milk.Combine it with the vegetables.and finally add cashew paste.check the salt,add if necessary.Garnish with corriander leaves.Serve it hot.
Tips
Cardamom adds nice aroma to the Gravy.
Coconut Milk can be added instead of milk to enhance the richness.
Making this dish a day before serving is a good idea as the flavours have
time to fully develop. Store in an airtight container in the fridge.
Reheat in a covered saucepan over low heat, adding a little water if
necessary.
