PAVAKKA PACHADI



INGREDIENTS

Bitter gourd/Pavakka - 2 medium
Shallots :4
Cumin seeds - 1/4 tsp
Grated Coconut: 1/4 cup
Curd: 1/2 cup
Mustard: 2 teaspoons
Dried Red chilies: 2-3
Curry Leaves: 1 sprig
Crushed mustard - a pinch
Oil to fry

PREPARATION

Finely slice the bitter gourd. Heat enough oil to deep fry bitter gourd till its dark brown and keep aside.
Grind grated coconut,shallots,cumin seeds,salt to a fine paste. Mix a potion of curd to this paste.
Heat oil in a pan and splutter the mustards and red chillies.Then add the coconut curd paste and heat it until bubbles come. 
Add the fried bitter gourd to this and nicely mix. 
Add the remaining curd and some curru leaves.Now sprinkle the crushed mustards on the top.(Just a pinch else it will taste bitter)And turn off the heat soon.Enjoy with rice.
