EGG PLANT PARMESAN
This is a main course dish.Teens as well as adults really go for this recipe. YUMMY!
Ingredients:
1-2 eggplant
3 tbsp oil
1 tbsp salt
1 can tomato sauce
1/2 tsp pepper
1/2 cup shredded mozzarella
3/4 cup fresh breadcrumbs
1 tbsp butter
Method of preparation
Preheat oven to 425 degrees. Remove skin from the eggplant and cut into slices.Toss eggplant with oil and salt to coat. Spread it out on a baking dish and place in oven. Bake for approximately 20 to 25 minutes, stirring until cooked through and browned. Reduce heat to 350 degrees. Place half of the eggplant in a buttered dish pour the tomato sauce on top of eggplant. Sprinkle with pepper and a little salt if needed. Cover with remaining eggplant, followed by the cheese, and finally sprinkle with breadcrumbs and dot with the butter. Bake for 20 minutes at 350 degrees, until cheese is melted and the breadcrumbs are golden brown.

Note:
You can have it along with garlic bread or simply toasted bread....
