CABBAGE-COCONUT RICE
INGREDIENTS :
• 2 Cups basmati rice, cooked
• 1/2 Cup coconut, grated
• 1 Cup cabbage grated
• 1 Onion
• 1/4 cup peanuts
• 1 tsp garam masala
• Salt to taste
• 1/2 tsp Turmeric powder
• Coriander leaves and mint leaves, for garnish
• 1 tbsp melted Butter
INSTRUCTIONS:
• Heat one tbsp butter in a shallow pan and add peanuts.
• When the peanuts are brown, add chopped onion.
• Fry till the onions are golden and add turmeric, salt and fry for a minute.
• Mix in the grated coconut and cabbages sprinkle little water.
• Keep the pan covered, on a low flame, till the raw taste goes.
• Mix in the rice.Add garam masala also.
• Garnish with finely cut coriander leaves and mint.
• The tasty cabbage coconut rice is ready to serve with raitha !!
