CARROT-CABBY PILAF
INGREDIENTS :
• 2 Cups basmati rice, cooked
• 1 Cup fresh carrot, grated
• 1 Cup cabbage grated
• 2 Green chilies
• 1 Onion
• 1 tbsp Cashew nuts
• 1 tsp garlic powder
• Salt to taste
• 1/2 tsp Turmeric powder
• 4 tsp Lemon juice
• Coriander leaves and mint leaves, for garnish
• 1 tbsp melted Butter
INSTRUCTIONS:
• Heat one tbsp butter in a shallow pan and add cashews.
• When the cashew nuts are brown, add chopped onion and green chilies.
• Fry till the onions are golden and add turmeric, salt and fry for a minute.
• Mix in the grated carrots and cabbages sprinkle little water.
• Keep the pan covered, on a low flame, till the veggies are done.
• Mix in the rice.
• Add lemon juice.
• Garnish with finely cut coriander leaves and mint.
• The stylish Carrot Cabby pilaf is ready!!
