POTATO CHEESE CROQUETTES
A traditional New England/North American preparation
This makes the perfect pre-dinner snack with drinks
Ingredients
4 Cooked and grated potatoes
2 Tbs Italian seasoning or any favourite spices
Salt for taste
Cheese sticks
2 large eggs
1 cup all-purpose flour
2 cups Italian-style seasoned bread crumbs
Vegetable oil for frying

Prepararation
Whisk the eggs in a bowl. Place the flour and bread crumbs in 2 other bowls.
Mix the grated potato and seasoning along with salt.Mash it well with hands.
With your hands, roll 1 rounded tablespoon of the grated potatoes into a cylinder and place the stick inside and wrap it well. Roll the croquette in the flour, eggs and bread crumbs.Repeat with the remaining ingredients and refrigerate for 30 minutes.
In a large, deep skillet, heat oil over medium-high heat. When the oil is hot but not smoking, fry the potato balls in batches, turning gently, until brown, about 2 minutes. Remove with a slotted spoon and drain on paper towels.
