VEGETABLE PULAV





INGREDIENTS

Basmati Rice  - 2 cups (washed and soaked for 15 mins)
Ghee               - 4 Tablespoon
All spices        - cardamom(3),cloves(4),bay leaves(3),cinnamon(1 stick)
Sliced onion     -1
Green chillies   - 4/5
Mixed Veggies  - carrot,beans,corn,green peas,Potato
Mint leaves
Coriander leaves
Yogurt              - 1 cup
Lemon Juice      -1
Raisins and nuts
Salt to taste

METHOD

In a large skillet,in 2 tablespoons of ghee saute raisins and nuts until brown,drain and reserve them.Add the remaining 2 tablespoons of ghee and add all spices..then add onions and saute until they are soft and golden.Add chiles and mixed veggies and stir constantly for few mins.Also add mint&coriander leaves along with lemon juice..Now add one cup of yogurt and mix all well.Then add 3 cups of water and let it boil and add rice with enough salt for taste.Cover the griddle tight and keep the heat between low and medium and let it be there for next 10-12 mins.When the rice is cooked well add the raisins and nuts and spoon the pulav onto a warm serving dish..Enjoy with a veggie or non veg side dish and raita
